This is text book comfort food for a cosy night in - we've matched a hearty veal sausage cassoulet with a delicious pinot noir in this Winter Banger.

For 4 serves, you will need:

  • 6 x veal and lemon sausages
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 400g tin cherry tomatoes
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp chopped thyme
  • 1 Tbsp lemon zest
  • 400g tin butter beans
  • Bread to serve

To make: 

  1. In a heated pan brown the sausages, then set aside.
  2. Warm the oil in a large pan. Cook the onion and garlic until softened. Add the tomatoes, vinegar, thyme, zest and butter beans bringing to a simmer. Add in the sausages. Place into the oven for 30 minutes until cooked through.
  3. Serve with warm crusty bread.
